CANARY PUDDING

INGREDIENTS (for 8 people)

1 l of milk
8 eggs
1/4 kg of sugar
2 thin biscuits
The zest of a lemon
Andalusian sugar cane molasses to suit your taste
Cinnamon to suit your taste

Method

Beat the eggs with a spoon and mix with everything else except lemon, cinnamon and grated or ground cookies that are put on last. Pour into a mold or square baking tray. Put in the oven at 170º for 30 min and when it is all "curdled" and browned, take it out of the oven and leave to cool. 

On the island of La Gomera (Canary Islands) they usually eat this dessert with Andalusian Sugar Cane Molasse poured on top.
