Ingredients (For 4 covers)

1 kg of fresh cheese
8 eggs
40 g of sugar
60 g of flour
The zest of a lemon
1 teaspoon cinnamon
Virgin olive oil to suit your taste
Andalusian sugar cane molasses to suit your taste


With a fork, crumble the cheese to form a paste, add the grated lemon rind, sugar and a little cinnamon. Add the eggs and flour, working them very well, until they make a firm paste. Sprinkle your hand with flour and form buns from the paste. Fry the buns in hot oil and then cover with Andalusian sugar cane molasses. Instead of frying, the buns can also be baked at 180º.
