The last house of cane honey (elpais.com)

The huge gate of the Frigiliana mill (Málaga) is a frontier of history. Indoors, the machinery is reminiscent of the industrial revolution. Part of it is from 1909. But the building is even older: it was built in the 16th century and has been declared an Asset of Cultural Interest. Its old access is today a warehouse, like the old chapel. But among its rooms there is also renovated equipment from the 21st century that has made it possible to update what is the only cane molasses factory in Europe. A rare bird in the agri-food sector that has managed to survive the times and grows at the pace of the boom in healthy eating. In these facilities, 500,000 kilos of concentrated sugar cane juice are produced each year, the legal denomination of cane molasses.
